I want to be able to see the date and time (timestamp) of my student's portfolio submissions (e.g., résumés, recommendations, Best Works). This is important so I can track when entries are submitted.

I would create a career planning activity for this. Then when a student uploads a file relative to the activity (the same items you’re suggesting) it will automatically complete the activity with a completed on timestamp.
