Create a solution for tracking missing timesheets by setting required days of the week

One of the concerns we have is about the timesheets and not being able to track missing timesheets. Basically, the way we're going to (at least at the start) be using the system is for job shadows, paid and unpaid placements.  All of these will require timesheets and students will be on a specific schedule based on the days they are released from class to work.  might there be a way to track who has not turned in timesheets for particular periods of time? Often students can become several weeks behind with their timesheets and we need to have a way to track what is missing.
